The Singular Patagonia is set the Chilean town of Puerto Bories, just outside Peurto Natales. on the shores of the evocatively named Last Hope Sound. Created from the unlikely site of an abandoned former cold storage plant, the Singular is anything but – its 57 five-star rooms and suites offer contemporary and comfortable accommodation made with sustainable materials in keeping with the hotel’s policy of preserving its surroundings – by constantly striving to reduce its water consumption and carbon footprint while increasing its energy efficiency. But as a guest, simple luxury is the order of the day and the design – with custom –designed furniture, crisp white bed linen, comfortable sofas to sink into and admire the views from the floor-to-ceiling, 19ft wide picture windows. As you might expect, every dish at the Singular restaurant is handcrafted from the best fresh local ingredients, and served with delicious Chilean wine. El Asador , or The Grill, seats 40 and serves freshly cooked meat from its open wood-burning grill. For drinks the bar offers a cosy ambience where you can sit and share your day’s adventures with fellow guests, over a signature cocktail.
